Veganuary and dentistry – easy recipes for plant-based living

Dr Bijal Sisodia-Shah and Dr Keval Shah share some of their own vegan recipes to help you on your plant-based journey – whatever that might look like.

Vegan quiche

Our very own vegan quiche recipe – this is packed with vegan sources of protein and veg!

Ingredients

  • Chickpea/Gram flour – 1 cup
  • Plant-based cheese of your choice (1/2 cup)
  • Plant-based milk of your choice (we use soya 1-1.5cups)
  • Tofu (firm) one packet (try smoked tofu for variety)
  • Short crust pastry – one packet
  • Kala namak (black salt) – 1 tsp
  • Nutritional yeast – 1 tbsp
  • Smoked paprika – 1 tsp
  • Red chilli – 1/3 tsp
  • Turmeric –1/3 tsp
  • Oregano – 1 tsp
  • Mixed herbs –1 tsp
  • Garlic – two cloves
  • Ginger finely chopped/grated – 1/3 tsp
  • Very thinly sliced leeks (1/2 a leek)
  • One very finely sliced onion
  • Sliced mushrooms, four to five medium size
  • Half a green pepper
  • Half a red pepper diced
  • Add in your favourite vegetables diced/sliced
  • Two tomatoes
  • You can add green chilli and ginger if you enjoy your spices!

Method

  1. Preheat the oven: 200c (180c fan assisted)/gas mark 6
  2. Lightly spray oil  in your oven dish. (I prefer to use a cake tin with a removable base)
  3. Short crust pastry: roll this out approx 5mm. You can buy this pre rolled if you like
  4. Line your pastry at the base and circumference of your cake tin
  5. Soy milk and chickpea flour – medium consistency (blend if you like). Add your cheese, dried herbs and spices mentioned above
  6. Squeeze out the water from your tofu and crumble into the mixture
  7. Sauté your garlic, ginger, onions, leeks and your veg in a pan (but don’t overcook your veg). Add the mixture into your pastry-lined oven dish
  8. Slice tomatoes and place on top. Add oregano, salt and pepper on top for taste
  9. Place in oven until gold brown – approximately 18 to 22 minutess and voila! Add basil at the end as garnish
  10. Top tip: season well and spice it up!

Fluffy vegan blueberry pancakes

Great alternative to your usual morning bowl of oats.

Ingredients

  • One ripe banana
  • One cup rolled oats
  • Half a cup of plant-based milk of your choice
  • Two tsp ground chia seeds or flax seed
  • One tsp of baking powder
  • Two dates
  • Optional: 1 tsp of vanilla essence.

Method

  • Blitz the above in a blender
  • Scoop into the pan on medium heat
  • Add blueberries and flip
  • Optional: drizzle with agave/maple syrup as a treat!
